The rides posted are all very exciting to consider.  Being a Nevada resident I have ridden the PCH as well as the Tail of the Dragon in NC.  Seems like the PCH in California is pretty much always busy and although beautiful not a whole lot of uninterrupted fun.  I have ridden it several times and each time there seems to be more traffic than before!

The Tail of the Dragon however can be a lot of fun Monday thru Thursday!  It seems a lot less crowded during those days.  One thing is to watch speed as there are always some newby bikers over doing things and running off the road, ending up down a wooded embankment!  This the Tree of Shame!!!  Weekends are slow going and quite crowded of course.  In any case have fun, be respectful and scrape some pegs!!
